CONSERVATION OF THE PALLET

The conservation and cutting of the Iberian shoulder are fundamental elements for its enjoyment. Here are some conservation and slicing recommendations to enjoy the full flavour of the ham:

    The shoulder piece must be in a cool and dry place, where the temperature is approximately 15ºC and the relative humidity of the environment is 75% more or less.
    The place where the shoulder is hung or where it is installed on the ham, must be protected against insects (pantry, cellar ...).
    In order to appreciate its exquisite taste, it is advisable to consume it at room temperature.
    If the palette is going to be consumed at different times, when we stop cutting it is advisable to cover the surface of the cut with pieces of excess fat to prevent it from drying out, and cover it with a mesh to protect it from insects.

WHAT ASPECTS CAN WE TAKE INTO ACCOUNT WHEN BUYING A PALLET?

The ham is bigger and longer, contains a greater proportion of meat than the shoulder. The price per kilo of ham is always higher than that of the shoulder. It is important to know how many people and in what time the piece will be consumed. The palette is recommended when it is a small family unit or if there are few people in the home and consumption is prolonged. The palette is more complicated to cut because the shape and position of its bones make the path more difficult than with a ham. The shoulder has more bones and more fat compared to a ham, but precisely because of that, it is usually more intense and tasty. Choosing between a ham or shoulder at the end is a personal matter, both options have their pros and cons, but the two have something in common, they will make you enjoy a unique dining experience.
WHAT DO THE COLOURFUL SEALS OF THE IBERIAN HAM MEAN?

There are 4 seal colours: black, red, green and white.

    Black, 100% Iberian acorn-fed ham: It comes from 100% Iberian pigs, fed freely on acorns and natural pastures from the meadows. It is the highest category of ham.
    Red, Iberian Acorn-fed Ham: It comes from pigs fed freely on acorns and natural pastures from the pasture. They can be 75% Iberian breed or 50% Iberian breed.
    Green, Iberian cured ham: It comes from pigs fed mainly on cereals, legumes and natural pastures. They can be 100% Iberian, 75% Iberian breed or 50% Iberian breed.
    White, Iberian bait ham: Comes from pigs fed on natural feed and raised on farms. They can be 100% Iberian, 75% Iberian race or 50% Iberian race.

When buying an Iberian shoulder it is important to pay close attention to the type and color of the seal and its vitola, not all Iberian shoulder are the same and these colors are what will identify your race and food.
